The peach is the delicious fruit from the peach tree, scientifically known as Prunus persica. Characterized by its rounded shape, its skin can be velvety (peaches) or smooth (nectarines), with a variety of colors ranging from yellow to carmine red. Its flesh, which can be fleshy or soft, offers a very sweet taste and a unique, unmistakable scent, while a large, woody stone is found in the centre. Native to China, the peach tree has been known since 2000 BC and is a symbol of immortality in this thousand-year-old culture. The peach is a highly moisturizing fruit, consisting of more than 90 per cent water, and rich in trace elements, including potassium (260 mg per 100 g). With a significant contribution of vitamin C and provitamin A, and when eaten with the peel, it is also an appreciable source of fibre (1.9 g per 100 g).
